My father was a sushi chef in Japan.
It was taught severely by him like how to cook Sushi rice (Shari) and fish's cooking method,
etc. He is very a severe person, and only he is a true chef to work.
I respect him. This occupation was chosen. There is no regret in the selection.
The sushi is a simple dish that a fresh fish and Shari play like musical
instruments. Therefore, cooking of the fish is very important.
My father also always said the thing.
The fish of which I do not consent never serves it to the customer.
I look like father, too and it is obstinate. It is his mission and my mission that serves a fresh, safe fish, too.
